Hey everyone! Since I'm officially in my off-season, I thought I'd play around in my kitchen a little bit this morning. I came up with a FANTASTIC no-bake recipe!!
Jenna's Sweet Maple Energy Bars
First, Spray an 8" aluminum cake pan with fat free cooking spray (to prevent stickiness)
Layer 1:
In a mixing bowl, combine:
1) 2 cups oats
2) 1/2 cup water
3) 3/4 cup Sugar Free Maple Syrup
4) Stir contents thoroughly. Pour into aluminum pan and pat down with spatula to flatten. Place pan in freezer. It only needs to be in there hardening for a few minutes.
Filler:
While layer 1 cools in the freezer, you can mix the filler.
1) Pour 4 scoops BSN Lean Dessert Fresh Cinnamon Roll Protein Powder into separate bowl
2) Mix with3/4 cup water
3) Pour cap Davinci Sugar Free Caramel Syrup into mixture
4) Stir into a paste
5) Take pan out of freezer and slowly pour filler on top of Layer 1. Layer 1 only needed to be in the freezer for a few minutes to harden, but you still want it soft enough to where it binds to the filler. Smooth it out if needed to cover entire layer.
6) Place back in the freezer
Layer 2:
Combine into original mixing bowl (I try to keep the "Layer" bowl separate from the "Filler/topping" bowl
1) 1 cup oats
2) 1/4 cup sugar free maple syrup
3) 1/4 cup water
4) 1 oz crushed walnuts
5) Stir contents in bowl. It'll have a crumbly-like texture which is okay.
6) Take pan out of the freezer and spread thin layer of contents over "filler."
7) Place back in freezer.
Frosting:
Mix
1) 1.5 scoops Syntha-6 Protein Powder Vanilla Ice cream with
2) 4 TB Poloner Seedless Strawberry All-Natural Fruit Spread (about 1/4 cup)
3) 1/4 cup water
4) Mix into a paste. This part is really the grand finale and adds just the right amount of sweetness :)
5) Take pan out of the freezer and pour frosting onto top.
6) Place back in freezer for 30 min.
7) Come back to freezer and cut into 8 portions, or 10 if you want more of a snack.
8) Put back into freezer for another 30 minutes or so for it to fully harden.
I just tasted this and it is AMAZING!!! Perfect for a sweet craving without killing your diet, and it's a great pick-me-up pre-workout snack, or you can use it post-workout :) I'm actually gonna bring one of these into the football stadium with me tomorrow for a snack during the football game!
For 8 servings = 265.38 Cal, 6.79g fat, 1.96g saturated fat, 36.25g carbs, 4.68g fiber, 5.34g sugar, 18.66g protein
For 10 servings - 212.3 Cal, 5.43g fat, 1.57g saturated fat, 29.03g carbs, 3.74g fiber, 4.27g sugar, 14.93g protein
