Cod w/ Pine Nut Brown Butter & Spinach

Has anybody tried this cod recipe? Always looking for new ways to prep cod. Although it's harder to find now the fish is still one of my favorite foods.

I tried it and it was okay - not sensational but just ok!

The chef at my work makes something similar but his is heavy on the butter and garlic and very yummy.

He sprinkles the lemon on the fish and not the spinach. He also blanches the spinach for 1 minute then tosses the spinach in a hot mixture of butter and garlic. The flavors really meld together and it makes for a wonderful albeit fat heavy meal.

Thanks for the heads up! No doubt heavy on le beurre would make things tastier. Thinking about it is making me mighty hungry! :)
